Why I Love This Recipe

I love Zucchini bread.. But felt it needed more spice's & color, and NO Sugar, I use Truvia Baking Blend instead of sugar .. so I played with recipe I had until I got the right amount of spice, then added pineapple & cranberries. I make these every year for our Christmas Party and give them to our Guest... They love them !!

Ingredients You'll Need

3 large Eggs
1 Cup Veg. Oil
1 Cup Truvia Baking Blend
2 Cups Shredded Zucchini
1 8 oz can Crushed Pineapple (Do Not Drain)
1 Cup Dried Cranberries
2 teaspoons Vanilla
3 Cups Flour
1/4 teaspoon Baking Powder
2 teaspoon Baking Soda
1 teaspoon salt
1 teaspoon teaspoon Nutmeg
1 1/2 teaspoons Ground Cinnamon
1 teaspoon Ground Ginger



Beat eggs, sugar & oil well, Stir in Zucchini, Pineapple & Vanilla, add all dry ingredients mix until well blended.. stir in Cranberries.

Pour into lightly greased loaf pans & bake at 350 for approx. 30-45 or until toothpick inserted comes out clean.

These Freeze very well.
