Sara's Ham and Cheese Casserole

Why I Love This Recipe
It all started in 1996, I think, when I was in the 1st grade and that winter my mom broke her leg. At the time I was attending a private school which was connected to the church my family belonged to. The mothers of my class once they heard the news, all got together and came up with a dinner pool. Each night a family would either put together a meal and drop it off at our house every night. This is one of the casseroles that has now become a family staple. It is a one dish meal and if timed right can be made in less than a hour including prep. Enjoy!
Ingredients You'll Need
1 to 2 pkg of Cubed Ham
2 to 3 potatoes, thinly sliced
2 fresh, canned, or frozen vegetables of choice (we love peas and carrots)
2 cans of cream soup of choice, add milk if desired for a runnier sauce
2 to 3 cups of cheese, (we love cheese so we add lots to it)
Directions
Pre-heat oven to 350 degrees for 30 to 40 minutes
Spray a non-stick spray to your 13x9 pan (makes easy clean-up)
Spread cubed ham along bottom of pan
Add the potatoes next making sure to cover the entire pan at least 1 layer
Next spread the 2 vegetables
Mix the 2 soups together then add on top of vegetables
Cover with foil, make sure to create a small tent to allow heat to move around.
Bake for the first 30 to 40 minutes.
Check after the first 30 to 40 minutes to see if the potatoes are cooked, this will take the most time.
If done, remove the foil
Add the cheese
Place pan back into the oven and bake for another 15 minutes.
Let it stand for a few minutes before serving.
