Sarah's Grammie Elsie's Swedish Rice Meatballs
Why I Love This Recipe
Grammie Elsie loves her green beans! We will usually double or triple the recipe to make big batches. Meatballs freeze well! This is a great cold weather comfort food!
Ingredients You'll Need
1 lb ground beef
¼ cup finely chopped onion
¼ cup uncooked rice
¼ cup saltine cracker crumbs
1 tsp salt
⅓ cup milk
⅛ tsp black pepper
2 tbsp oil for browning meatballs
1 can Cream of Mushroom Soup
½ cup water
1 cup mushroom pieces
Mix together beef, onion, rice, cracker crumbs, milk, salt and pepper.
Shape with hands into 1-inch balls.
In a large pot (I prefer cast iron), fry slowly in oil and fat from meat, turn to brown evenly.
Add soup mixed with water, cover and simmer for 1 hour.
Add mushrooms towards the end to gravy and heat through.
Serve with mashed potatoes and green beans, or other vegetables of choice.
