Grammie Elsie's Swedish Rice Meatballs
Ingredients You'll Need
Meatballs
• 1 lb ground beef
• 1/4 cup finely chopped onion
• 1/4 cup uncooked rice
• 1/4 cup saltine cracker crumbs
• 1tsp salt
• 1/3 cup milk
• 1/8 tsp black pepper
• 2 tbsp oil for browning meatballs
Gravy
• 1 can Cream of Mushroom Soup
• 1/2 cup water
• 1 cup mushroom pieces
Directions
Directions:
Mix together beef, onion, rice, cracker crumbs, milk, salt and pepper. Shape with hands into 1-inch balls. In a large pot (I prefer cast iron), fry slowly in oil and fat from meat, turn to brown evenly. Add soup mixed with water, cover and simmer for 1 hour. Add mushrooms towards the end to gravy and heat through.
Serve with mashed potatoes and green beans, or other vegetables of choice. Grammie Elsie loves her green beans! We will usually double or triple the recipe to make big batches. Meatballs freeze well! This is a great cold weather comfort food!
