Why I Love This Recipe

This can be modified in so many ways, and will be delicious! Easy conversion to gluten free, vegan, whole food, using any type of sausage or pasta (or skip the pasta!). Adding in broccoli, or big zucchini chunks, or a can of fire-roasted diced tomatoes,


Ingredients You'll Need

1 package (13 to 14 ounces) smoked turkey sausage, thinly sliced
3 cups grape tomatoes, halved
2 cups fresh basil leaves, loosely packed
1 large onion, thinly sliced
4 garlic cloves, thinly sliced
1 cup grated Parmesan cheese
3/4 teaspoon salt
1/2 teaspoon pepper
3/4 teaspoon crushed red pepper flakes, optional


Directions

In a large pot or dutch oven, combine the first 7 ingredients.


Bring to a boil. Lower heat and simmer uncovered until pasta is slightly soft, about 8-10 minutes. Stir several times to avoid pasta sticking!


Add in salt, pepper and stir in cheese until melted. Add pepper flakes if desired, top with additional Parmesan cheese and small basil leaves for garnish.
