Our family loves to use fresh baby spinach in a variety of recipes. This combination of spinach and heirloom tomatoes with gruyere is especially good.
Ingredients You'll Need
4 chicken breasts, cut in half horizontally and lightly pounded
olive oil
freshly ground sea salt and pepper to taste
package of baby spinach
package of heirloom cherry tomatoes
1 c. grated gruyere (or swiss) (DF substitute basil for flavoring)
Directions
Heat olive oil in a large skillet and brown chicken on both sides, seasoning with freshly ground sea salt and freshly ground pepper. When chicken is done, add cherry tomatoes and cook tomatoes are bursting. Add spinach and cook until spinach is wilted. Top with cheese and/or fresh basil, cover and turn off heat. Serve when cheese is melted.
