Ingredients You'll Need

4 chicken thighs, bone-in and skin-on
1 cup sliced mushrooms
1 onion, diced
2 carrots, sliced
2 potatoes, diced
3 cloves garlic, minced
1/2 cup chicken broth
1/4 cup white wine
2 tbsp olive oil
1 tsp thyme
Salt and pepper to taste
Fresh parsley for garnish


Season the chicken thighs with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat.

Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken and set aside.

In the same skillet, add the onions, carrots, and mushrooms. Cook until the vegetables are slightly softened, about 5 minutes.

Add the minced garlic and thyme. Stir for 1 minute until fragrant.

Pour in the white wine and let it simmer for a couple of minutes.

Return the chicken thighs to the skillet and add the chicken broth. Simmer for 20-25 minutes until the chicken is cooked through and the sauce has thickened.

Add the diced potatoes and continue to cook for another 10-15 minutes until the potatoes are tender.

Adjust the seasoning with salt and pepper as needed.

Garnish with fresh parsley before serving.
