Why I Love This Recipe

Chickpeas, also known as garbanzo beans, have been cultivated for over 7,000 years and are one of the earliest cultivated legumes.

Ingredients You'll Need

2 cups cooked quinoa
1 can chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup almond butter
2 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste


In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and cilantro.

In a small bowl, whisk together the almond butter, lemon juice, olive oil, cumin, paprika, salt, and pepper to make the dressing.

Pour the dressing over the quinoa and chickpea mixture and toss to coat everything evenly.

Divide the mixture into serving bowls and enjoy!
