Its tough to get veggies in for breakfast. Here is a traditional breakfast food, that can also be served for lunch and diner packed with the rainbow of nutrients!
Ingredients You'll Need
1 whole egg
150 g egg whites
5 g gluten free pancake mix
25 g savory sauce (see recipe)
50 g ratatouille (see recipe)
Additional herbs on hand (rosemary, thyme chives etc)
salt and pepper to taste
blend whole egg and egg whites well with pancake mix. Pour into a 12-14 inch skillet. cook on med high for 1 min. Add ratatouille, savory sauce and top with desired herbs, salt and pepper.
cook for approx. 4 more min. Fold over edges into thirds, plate and enjoy!
