Ingredients You'll Need

1/2 head of green cabbage, thinly sliced
2 medium carrots, diced
1 large yellow onion, chopped
3 cloves garlic, minced
2 medium Yukon Gold potatoes, cubed
1/2 teaspoon turmeric powder
1/4 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 bay leaf
6 cups vegetable stock
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
Chopped fresh parsley for garnish


Directions

***Preparation***
1. Prepare all vegetables: thinly slice the cabbage, dice carrots, chop onion, cube potatoes, and mince garlic. Set aside.
***Cooking***
2. Heat a large soup pot over medium heat and add the olive oil.
3. Once the oil is heated, add the chopped onion and sauté until translucent.
4. Add minced garlic and cook for another minute until fragrant.
5. Stir in carrots and potatoes, cooking for 3-4 minutes until they begin to soften.
6. Sprinkle turmeric powder, ground cumin, and smoked paprika over the vegetables and stir thoroughly to combine.
7. Add the sliced cabbage, stirring it into the vegetable mixture.
8. Pour in the vegetable stock and add the bay leaf.
9. Bring the mixture to a gentle boil before reducing heat to a simmer.
10. Let the soup simmer uncovered for 20-25 minutes, stirring occasionally, until all vegetables are tender.
