1 lb ground turkey
2 medium tomatoes, chopped
1 medium onion, diced
3 garlic cloves, minced
8 oz mushrooms, sliced
2 tbsp olive oil
1 tsp salt, divided
1/2 tsp black pepper
1/2 tsp smoked paprika
1/4 tsp red pepper flakes (adjust to taste)
1 tbsp balsamic vinegar
1 tsp fresh thyme leaves or 1/2 tsp dried thyme
1 cup shredded mozzarella cheese (optional)
Fresh parsley, chopped (for garnish)
Directions
In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the diced onion and minced garlic, then sauté until fragrant, about 3 minutes.
Add the ground turkey to the skillet, season with 1/2 tsp salt, black pepper, smoked paprika, and red pepper flakes. Cook until browned, about 5-7 minutes.
Include the sliced mushrooms in the skillet and cook until softened, about 3 minutes. Stir in the thyme.
Add the chopped tomatoes and balsamic vinegar to the skillet and mix well. Reduce the heat to low and simmer for 5 minutes to meld the flavors.
Turn off the heat. If you're using mozzarella cheese, sprinkle it over the top of the mixture, cover the skillet with a lid, and let it sit for a few minutes until the cheese melts.
Serve immediately, garnished with fresh parsley if desired.
