Ingredients You'll Need

1 cup dried green or brown lentils, rinsed and drained
2 medium carrots, peeled and diced
2 medium parsnips, peeled and diced
1 large sweet potato, peeled and diced
1 onion, chopped
3 cloves garlic, minced
4 cups vegetable broth
1 can (14 oz) diced tomatoes
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon turmeric
Salt and pepper, to taste
2 tablespoons olive oil


In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until fragrant.

Add the carrots, parsnips, and sweet potato. Cook for a few minutes until slightly softened.

Stir in the lentils, vegetable broth, diced tomatoes, cumin, paprika, turmeric, salt, and pepper.

Bring the mixture to a boil, then reduce heat and simmer for about 25-30 minutes or until the lentils and vegetables are tender.

Taste and adjust seasonings if needed. Serve hot and enjoy!
