Savory Peppered Beef and Potato Pilaf

Ingredients You'll Need

1 cup jasmine rice
2 medium potatoes, diced
1 pound ground beef
1 large tomato, diced
1 medium onion, finely chopped
3 garlic cloves, minced
2 tablespoons olive oil, divided
2 teaspoons freshly ground black pepper, divided
1 teaspoon paprika
Salt to taste
3 cups beef or vegetable broth
2 spring onions, chopped for garnish


Directions

Heat 1 tablespoon of olive oil in a deep skillet or pot over medium heat.
Add the diced potatoes, sauté for 5-7 minutes until golden, then remove and set aside.
In the same pot, add the remaining tablespoon of olive oil. Sauté the onions and garlic until fragrant.
Add the ground beef, cook until browned, breaking it up into pieces during cooking.
Incorporate the diced tomato, and season with 1 tsp black pepper, paprika, and salt.
Add the rice and stir to coat in the mixture. Return the sautéed potatoes to the pot.
Pour in the broth, bring to a boil, then reduce to simmer. Cover and cook for about 18-20 minutes or until the liquid is absorbed and rice is tender.
Remove from heat. Let sit covered for 5 minutes then fluff gently with a fork.
Garnish with chopped spring onions and remaining black pepper to serve.
