Savory Spinach and Egg Quiche

Why I Love This Recipe
This recipe comes from one of my best friends, my Aunt Susan. When I was young, she moved away for work. So every time I would visit, she would make this spinach quiche for me for breakfast. I remember waking up to the smell of this delicious savory pie baking in the oven. I would saunter into the kitchen with a smile on my face and eagerly wait for this pie to come out of the oven.
My aunt has moved around for work since then, but the one thing that remains the same is that we always enjoy this quiche for breakfast together when I visit.
This recipe is now a staple in my house too! I love making this for my family or when company comes over or really anytime I need a simple and tasty dish to put on the table.
This yummy spinach quiche should be in everyones repertoire!!
Ingredients You'll Need
4 eggs
1 1/2 cups milk (whole)
1 cup grated cheese (cheddar or mixed)
1 (10oz) pkg. frozen spinach (thawed, water squeezed out)
1 pkg. Knorr vegetable soup mix
1 9in. Unbaked Pie Shell
Directions
Preheat 375
Beat eggs together in a large bowl for one minute; then add milk and beat an additional minute. Stir in thawed spinach, cheese and soup packet. Mix until ingredients are incorporated. Pour mixture into an unbaked pie shell. Bake on middle rack for 50-60 minutes. Allow to rest for 15 minutes.
