Scalloped Potatoes with Swiss Cheese
Why I Love This Recipe
This is one of those winter recipes to warm up the kitchen and fill hungry tummies. It has sufficient protein for an entree with a vegetable and salad.
Ingredients You'll Need
5 medium potatoes, peeled and sliced thin
1 - 1/2 cup whole milk
3 tablespoons margarine
3 tablespoons flour
1 teaspoon salt
1/4 teaspoon dried dill weed
1/4 cup finely minced yellow onion
3 ounces shredded Swiss Cheese
1/2 cup French-fried onions
Layer the potatoes in a greased casserole.
Microwave them 15 minutes on high, turning the dish every five minutes.
Melt margarine on medium heat and add flour, dissolving with wire whisk.
Pour into margarine and flour 1/2 cup milk and mix until smooth.
Add salt, onion and dill weed.
Mix remaining milk into the sauce and heat, stirring regularly, until it begins to bubble and thicken.
Add cheese and stir until melted and the sauce is smooth.
Pour over the potatoes.
Sprinkle onions over top.
Bake at 350 degrees 20 minutes or until the sauce begins to bubble.
