Why I Love This Recipe

Several recipes tweaked over the years to become a family favourite and so easy!

Ingredients You'll Need

350g self raising flour
1/4 teaspoon salt
1 teaspoon baking powder
85g butter
3 tablespoons sugar
175ml milk
1 teaspoon vanilla
a squeeze of lemon juice


Heat oven to 200C

In a bowl mix flour, salt & baking powder

Add butter and using fingers rub in until mixture looks like fine bread crumbs.

Stir in the sugar.

Add milk to a pan and heat gently until warm.

Take off heat and add squeeze of lemon juice and the vanilla, leave for a while.

Put a baking sheet in the oven.

Back to the flour mixture. Make a well in the centre and add the milk, juice and vanilla.

Using a knife quickly mix.

Put some flour on your work top. Turn out the dough and combine a little more. Try not to work it too much.

Roll out so it is approx 4-5cm deep.

Using a cutter cut out scones.

Gather up the unused dough and roll out again and cut out more scones. Repeat until all dough is used.

Put all scones onto hot baking tray.

Bake for approx 10 mins. They should have risen with golden coloured tops.

They can be eaten warm (best!) or cold on the day of baking with jam and ideally clotted cream. In HK whipped is ok!
