Scotch Eggs

This is an easy food to make as well as very delicious. It should be more popular in the U.S.
Ingredients You'll Need
Breakfast sausage - 16 oz
Fresh sage, chopped - 1 tsp
Fresh thyme, chopped - 1 tsp
Worcestershire sauce - 1 tsp
Salt and pepper - TT
All-purpose flour - as needed
Bread crumbs, dry - as needed
Eggs, beaten - 2
Eggs, hard cooked, peeled - 8
Directions
Mix together the sausage, herbs, Worcestershire sauce, salt and pepper in a bowl.
Place eggs in a pot of cold water on the stove. Once the water comes to a boil turn off the heat and wait 10 minutes. Place eggs into an ice bath.
Divide the sausage mixture into 8 equal portions. Flatten each portion into a thin patty. Dust each boiled egg in flour and wrap it in a portion of the sausage.
Bread the covered egg with the 3-step breading process.
Deep fry the eggs for about 7-8 minutes at 350ºF or until the sausage is fully cooked. Finish them in the oven if they are too dark before they finish cooking.
Serve the eggs halved or quartered, hot or cold, with dijon mustard.
