I was a bit skeptical when I saw a salad with a base of entirely cilantro. But it is sooo fresh and goes really well with a fatty fish. So fresh! If you don't want only cilantro you can do half and half with parsley or throw some dill or mint in the mix, but the key is to use 3 cups of herbs.
Ingredients You'll Need
1 tbsp rice wine vinegar
1 shallot
2 tbsp sesame seeds
3 cups cilantro, tender leaves and stems
Directions
Toss shallot rings with rice wine vinegar in a medium bowl and let sit for a few minutes to lightly pickle
Toast the sesame seeds in a small skillet over medium heat, tossing frequently until seeds are golden brown and fragrant, 3 to 4 minutes
Add the sesame seeds, herbs and sesame oil to the shallots and toss to combine
