Why I Love This Recipe
I grew up eating this delicious Bar during the winter time. Growing up in India, during winter times my mom used to make it saying that jaggery and sesame seeds will keep you warm in winter. This bar is chewy, crunchy and sweet and not made from sugar but jaggery. Jaggery helps to keep your body warm and has a good source of iron. It also improves immunity and it's a great substitute of sugar
Ingredients You'll Need
1 cup roasted sesame seed
⅓ cup jaggery ( I used organic brown colored jaggery which is soft texture )
Pinch of ginger powder (optional) ⅛ teaspoon
Few drops of water
In a medium pan roast sesame seed for at least five minutes until it turns light pink. Turn off the stove and let it cool down.
In a medium pan add water and jaggery in medium- low flame on the stove. Mix the jaggery and water with spatula until the jaggery turns brown and bubbly. Stirring constantly to avoid overcooking.
If you want to check if the syrup is ready or not, take water in a small bowl and drop the syrup. If the syrup stays still then it’s ready for the next step.
Once the syrup is ready add the roasted sesame seed into the jaggery syrup and mix well. Let the sesame seed cook in the syrup about 2-3 minutes in low- medium flame.
To roll this dough - get the parchment paper and put the dough on it . Take 1-2 drops of oil or butter to grease your hand and roller and roll it as the dough is hot.
It will be easy to roll when the sesame seed and jaggery dough is hot. Be careful while rolling, it can be very hot.
Roll a thinner layer as much as you can and cut into squares or in diamond shape. Let it cool down completely and break the shapes with your hand and enjoy. It’s chewy and crunchy.
