Why I Love This Recipe

Did you know that Taylor Swift's favorite cake flavor is actually coconut? However, she loves all things sparkly and pink, so this gluten-free vanilla cake with a touch of edible glitter and a vibrant pink hue is sure to delight her and her fans alike!

Ingredients You'll Need

2 cups (240g) gluten-free all-purpose flour
1 teaspoon (5g) salt
2 teaspoons (10g) baking powder
1 cup (226g) unsalted butter, softened
1 3/4 cups (350g) granulated sugar
4 large eggs, at room temperature
2 teaspoons (10ml) vanilla extract
1 cup (240ml) whole milk, divided
1/4 cup (60ml) pink food coloring
1/2 cup (120ml) edible glitter or sprinkles, divided


Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

In a medium bowl, whisk together the gluten-free flour, salt, and baking powder. Set aside.

In a large bowl or the bowl of a stand mixer, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.

Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.

Alternately add the dry ingredients and 3/4 cup (180ml) of the milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly between two bowls. Add the pink food coloring to one bowl and mix until the desired shade of pink is achieved.

Fold 1/4 cup (60ml) of the edible glitter or sprinkles into the pink batter.

Pour the pink batter into one of the prepared cake pans and the plain batter into the other pan.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, frost the cake with your favorite gluten-free frosting and decorate with the remaining edible glitter or sprinkles. Have fun with your decorating -- here are some ideas -- draw musical notes, create tiny chocolate albums or records, use quotes using edible ink (You can write them around the sides of the cake or on top of the tiers), a miniature acoustic guitar, microphone, red lips (referencing her red album), cats (she loves cats!) or even a football jersey (if she's still the Kansas Chief's biggest fan when you make this).

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days.
