Sheera/Sooji ka Halwa

Why I Love This Recipe
Sheera also known as sooji ka halwa is a quick and easy to make pudding which is made of fine semolina. Sheera is usually made for an auspicious occasion or even during festivals!!
It’s my go to dish for any event and is my 3 yo daughter’s favorite too!! It’s so easy to make and is ready in minutes!

Ingredients You'll Need
Clarified butter/Ghee (1.25 cups)
Sugar (1 cup)
Cardamom/Elaichi (3-4 units)
Fine Semolina /Sooji /Rava
Saffron threads ( 4-5)
Water (2 cups)
Dry fruits including almonds, cashews, walnuts (4-5 units and each) (optional) Raisins (10-15 units) (optional)
Directions
1. Heat 1 cup clarified butter in a pan and wait till it melts
2. Add 1 cup semolina to the clarified butter and roast the semolina. Add saffron threads (optional)
3. Separately on a different burner, add 1 cup sugar and cardamom to 2 cups water and let boil
4. Lightly crush the dry fruits roast them separately in clarified butter
5. Once oil starts separating from semolina, add the boiling water and keep stirring
6. Mix well and then add the roasted dry fruits
