Shito Tilapia with Vegetable Rice

Why I Love This Recipe


Ingredients You'll Need

4 whole cleaned tilapia
1 tablespoon of Efia Shito (www.efiashito.com)
4 whole garlic cloves
1 1/2 whole onions
2 Maggi shrimp cubes
1/4 teaspoon of black pepper
salt to taste
3 cups of rice (white or brown)
sweet corn (1/2 bag frozen or fresh equivalent)
peas (1/2 bag frozen or fresh equivalent)
green beans (1/2 bag frozen or fresh equivalent)
carrots (1/2 bag frozen or fresh equivalent)
2 whole tomatoes, sliced
1 lemon, cut into wedges


Directions

Blend garlic and 1 whole onion (liquefy)


mix onion & garlic marinade with Shito, Maggi cubes, pepper, and salt


spread sauce on tilapia and marinade for 30 minutes


steam rice and set aside


cover broiler sheet with aluminum foil & grease foil with olive oil and marinade


add tilapia to sheet, spread marinade over fish, and broil 2-4 minutes on each side (depending on how dry you prefer your fish)


lower oven heat to 350


transfer tilapia to oven & bake, covered, for 10-15 minutes


heat 1 tsp of olive oil in a wok


dice 1/4 whole onion and brown in wok


mix in sweet corn, peas, beans, carrots and/or any other vegetables of your choice


stir fry vegetables until soft


mix in rice, lower heat, & cover for 2 minutes


remove tilapia from oven and immediately spread all tilapia with ~2 tablespoons of Shito


serve with rice, tomato slices & lemon wedges


Ymmm. Dinner is served.
