Shrimp Gumbo

Ingredients You'll Need
1/2c oil
1/2c + 2tbsp flour
1 green pepper, diced
1 onion, diced
3 stalks of celery, diced
4 cloves garlic
1tbsp Cajun seasoning
1 quart stock
2tsp Worcestershire sauce
8-12oz andouille
2lb shrimp, peeled and deveined
salt and pepper
3 green onions
Directions
Make roux:
heat oil in pot over medium high heat. whisk in flour and lower heat. stir constantly. cook until copper, 20min
add onions, peppers, and celery bringing heat up, cook 5min then add garlic and Cajun seasoning
add stock and let simmer to thicken. add Worcestershire sauce
Stir in Andouille sausage and cook 5 min
add shrimp and simmer 5 more min
serve with green onion as garnish
