Shrimp Sinigang

Ingredients You'll Need
1 sliced red onion
2 quartered tomatoes
1 green chili
100 grams tamarind pulp
1 cup hot water
8 cups shrimp stock
mixed veggies such as green beans, sliced daikon and/or sliced Japanese eggplant
8 oz spinach leaves
24 prawns
¼ cup fish sauce
1 teaspoon sugar
Directions
Saute onion, tomatoes and green chili 3 minutes. Stir in tamarind pulp dissolved in hot water and shrimp stock; bring to a simmer. Stir in mixed veggies; simmer 4 - 5 minutes. Add spinach; simmer 3 minutes. Add prawns; cook 3 minutes. Remove from heat; stir in fish sauce and sugar; taste and adjust seasoning.
