Shrimp and Warm Black Bean Salad

Why I Love This Recipe
I modified this from a Good Housekeeping recipe to accommodate some of the ingredients I had on hand and wanted to use. You could easily make it with cooked chicken or beef strips. Amounts and times are approximate since I made this up as I went. Tweak to your preference/experience.
Ingredients You'll Need
8-10 raw shrimp, shelled and deveined
cooking spray
1 small onion, for 1/3 cup chopped
1 clove garlic, minced
1 T. lemon juice
1/4 c. each of chopped red and yellow bell pepper
1 c. fresh or frozen kernel corn
1 14.5-oz. can of black beans, rinsed and drained
1/4 c. chopped tomatoes
1 green onion, chopped
Directions
Saute shrimp in cooking spray until cooked. Remove from pan, keep warm.
Spray pan with cooking spray and add chopped onion and garlic. Cook on medium-high heat for 3-5 minutes. Add lemon juice and peppers, cook another 2 minutes.
Add corn, cook 3 minutes.
Add black beans, tomatoes, and shrimp. Heat through for 5-8 minutes, adding green onions in the last minute of cooking.
Makes about 4 servings.
Start to finish: 25 minutes
Next time I will bump things up with chili powder!
