Shrimp or Crawfish Fettucini

Why I Love This Recipe
This dish goes a long way, great for pot luck my family loves it. This recipe will usually make 2 9x13 pans, so I usually cut in half if preparing for a family dinner.
Ingredients You'll Need
3 Sticks Butter
3 Med Chopped Onions
3 Ribs of Celery Chopped
1-2 Green Bell Peppers Chopped
4 tsp Fresh Parsley chopped
3 lbs Crawfish or Med Size Shrimp
1 Quart Half and Half
1 Cup Cubed Velveta Cheese
2 Tsp Jalapeno Peppers finely chop
3 Cloves Garlic Crushed
16-20 Fettucini Noodles cooked
Salt and Pepper to taste (cayenne)
Parmesian Cheese
Directions
Boil noodles till almost cooked, rinse in cool water, set aside to drain and cool.
Melt butter in large heavy saucepan, add onions, celery, bellpepper.
Cook until seasoning is tender.
Add Crawfish tails or Shrimp cover and cook 10 min on med/low heat.
Add cream, velveta, jalapenos, garlic, parsley, salt and pepper, stir.
Continue cooking on low/med for additional 15-20 min, stirring occasionally.
Pour noodles into buttered 9x13 casserole dish.
Pour cream mixture over noodles, mix well.
Sprinkle with parmesian cheese, bake at 350 for 15 minutes.
* I have found that just the cream mixture alone without the noodles makes a great bisque (soup).
Great served with crusty garlic bread.
