Simply Peanut Butter Cookies

Why I Love This Recipe
"Pops kept talking about Peanut Butter cookies one night, so found this recipe - turns out they were the best peanut butter cookies I had ever had. Win!" ~ Judy
Ingredients You'll Need
1/2 cup Sugar
1/2 cup Dark Brown Sugar, Packed
1/2 cup Butter, Room Temperature
1/2 cup Peanut Butter
1 Egg
1 1/4 cup Flour
3/4 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt
Directions
Oven Temperature: 300°F
*Beat butter until creamy; Add the sugars and beat for 2 more minutes; Mix in peanut butter and egg; add dry ingredients
*Wrap dough in plastic and refrigerate at least 3 hours
*Preheat oven to 300 degrees; shape dough into balls, place about 3 inches apart on ungreased cookie sheet
*Flatten in crisscross pattern with a fork, sprinkle with sugar, and bake until lightly brown - about 12 minutes - don't overcook or cookies will be crunchy
*Transfer to cooling rack
Recipe Tips
*The best way to make sure your cookies are soft and delicious is use two cookie sheets when baking, take cookies out as they just barely look done and let them sit on the cookie sheet while you fill up the next sheet with the new batch...once you are putting the new batch in the oven then transfer hot cookies to the cooling rack. The cookies will continue to cook on the hot cookie sheet and yet will remain soft when cooled down
* Variation to this recipe is instead of flattening with fork, roll ball in sugar and bake until just lightly brown, immediately press hershey kiss in center of cookie
