Why I Love This Recipe
Tacos have a long history dating back to the 18th century, originating in the silver mines of Mexico. They were a convenient way for miners to eat their meals.
Ingredients You'll Need
1 lb flank steak
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
8 small flour or corn tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1/2 cup crumbled queso fresco
Lime wedges for serving
Directions
Preheat grill or grill pan to high heat.
In a small bowl, mix together olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to create a marinade.
Rub the marinade all over the flank steak and let it sit at room temperature for 15 minutes.
Grill the steak for 4-5 minutes per side for medium-rare, or to your desired level of doneness.
Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
Warm the tortillas on the grill for about 30 seconds per side.
Assemble the tacos by placing sliced steak on each tortilla and topping with lettuce, tomatoes, red onion, cilantro, and queso fresco.
Serve with lime wedges for squeezing over the tacos.
Pairs Well With
A bold and fruity red wine, such as a Malbec, pairs perfectly with the smoky and spicy flavors of the steak tacos.
