Skillet Bread

Why I Love This Recipe
FEATURING: Basil or cilantro.
A rather easy pita/Mediterranean bread that is so good when hot!
For a cheat version, just toast naan bread from the store. Add butter (or Vegan margarine) and fresh herbs. You can also add anything you want to this delicious bread (tomatoes, protein of your choice, lettuce, cucumbers, etc.)

Ingredients You'll Need
FOR THE BREAD
250 grams of unbleached white flour
4 grams of instant yeast
4 grams of sugar
5 grams of salt
175ml lukewarm water
FOR GARNISH
Butter or margarine (vegan)
Fresh herbs, chopped (basil or cilantro)
Directions
In a large bowl, add the flour, baking powder, sugar and salt (being careful that each ingredient does not touch each other). Add lukewarm water. Mix. Knead the dough. Put the dough in the bowl, cover the bowl with a clean dish towel and let it rest for 60-120 minutes, until the dough has doubled in size.
Then cut into 4 pieces. By hand, roll out the dough until each piece is approx. 10 inches. NOTE: if you want this step to be less messy, you can cut 10 inch squares of parchment paper, add a little oil to each square and then spread the dough on each square using your fingers- just make sure to take off the parchment paper when you lay out the dough in the frying pan in the next step.
Heat a frying pan (or griddle) over medium-high heat (ex: 6-7) so that it is very hot. Place one bread at a time. Heat until small bubbles form (approx. 3-4 mins) then flip and cook again until small bubbles form (approx. 3-4 mins). Remove the bread from the stove and put it on a plate covered with a large metal bowl (to keep in the heat). Repeat for each bread (you will stack the baked bread on top of each other under the bowl while the others bake).
Once the breads are done, coat each warm bread with butter/vegan margarine and fresh basil (or cilantro).
