Skillet Green Beans with Tomatoes

Ingredients You'll Need
2 cloves garlic, minced
1 cup onions, thinly sliced
⅔ cup green pepper, chopped
⅔ cup celery, diced
2 Tbsp butter plus ½ tsp bacon fat
3 cups cut fresh green beans precooked for 10 minutes or 1 package frozen, thawed green beans
2 cups fresh tomatoes, chopped
½ cup fresh parsley, chopped, or 2 Tbsp dried parsley
Salt and pepper to taste
1 In skillet, sauté garlic, onion, green pepper, and celery in butter and bacon fat for about 3 minutes.
2 Add chopped tomatoes, green beans, and parsley; cover and cook 15 minutes.
3 Season with salt and pepper.
