Slap me Silly Chocolate Cake

Why I Love This Recipe
I was making cakes for people at work when a co-worker asked if I could make him an Irish potato cake, I said sure and then he said to " make it Irish"
So I pulled out my old stand by and started playing again. This cake is now the tradional birthday cake for people celebrating thier 21st. The original was made with Jamiesons but have since discovered that Disorrono works really well too. Hope you enjoy
Ingredients You'll Need
2 Cups Mashed Potato- Use red or yukons
2 Cups AP Flour
1/2 tsp Ground GInger
1 tsp Baking powder
1 tsp Baking soda
1 tsp Cinnamon
1/4 Cup unsweetened Cocoa
1 Cup Unsalted Butter
2 Cups White Sugar
4 Lg Eggs - Separated
1 tsp Vanilla
3 tsp Irish Whiskey
1 tsp Creme de Cocoa
3/4 Buttermilk
1 Cup Dried Cherries
Directions
Pre-heat oven 300,
Spray and line 2 9 " pans with parchment paper
Peel and steam Potatos, Mash and set aside
Sift all dry ingredients together and set aside
Cream Butter and Sugar together
Add yolks one at a time, mixing 1 min after each
Add Flavorings and mix gently
Alternate Flour and Buttermilk into Butter/Sugar, Beginning and ending with Flour
Stir in potatos and Cherries
Beat egg whites until stiff but not dry, Fold into cake mixture
Pour into prepared pans, bake appx 60 min, or until springs back when touched.
Ice with American Butter Cream, flavored with Irish Cream,
Best served with a good strong coffee
