"Raw Vegan Salad Energy"

Serves 2-4 | Prep Time 30 minutes | Cook Time none

Why I Love This Recipe

Slaw - excellent salad to prepare in advance to when you need it. It holds up well, in fact tastes better if you make it several hours before you need it. The flavors enhance in the fridge.


Ingredients You'll Need

1 cup shredded beets
1/2 cup shredded carrot
1/2 cup shredded purple cabbage
1/2 cup shredded green cabbage
1/4 cup diced green onion or leek
2 Tbsp diced red onion
3 Tbsp raisins

----- optional ---------
1 Tbsp dried onion flakes
1 Tsp dried garlic flakes
1 Tbsp caraway seeds

------blend these ingredients until smooth -----
1/4 cup lemon juice
1 Tbsp oil
1 Tsp maple syrup
2 Tsp cashews


Directions

Mix all ingredients in a large bowl, cover and place in refrigerator for a few hours before serving.
