Cauliflower is a keto superstar with barely any potassium compared to other veggies, making it a low-carb and kidney-friendly choice!
Ingredients You'll Need
2 pounds bone-in, skin-on chicken thighs (or boneless if preferred)
3 cups cauliflower florets
1 small onion, sliced thinly (use sparingly, as onion has moderate potassium)
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried Italian herbs (blend of basil, oregano, thyme)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon smoked paprika (optional, for color and smokiness)
1/4 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/4 cup chicken broth (low-sodium, potassium-friendly option)
2 tablespoons fresh lemon juice
Lemon wedges and parsley (for garnish)
Directions
Pat the chicken thighs dry with paper towels. Mix olive oil, Italian herbs, garlic powder, onion powder, paprika, salt, and black pepper in a small bowl, then rub it all over the chicken.
Lightly grease the bottom of your slow cooker with olive oil or non-stick spray. Layer the cauliflower florets and sliced onions at the base.
Place the seasoned chicken on top of the vegetables. Sprinkle the minced garlic evenly over the chicken. Add chicken broth around the chicken (not directly on top, to keep the seasoning intact) and drizzle the fresh lemon juice over everything.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F.
Before serving, broil the chicken for 3-5 minutes to crisp the skin (optional). Garnish with fresh parsley and lemon wedges for extra brightness.
Serve warm and enjoy!
Pairs Well With
A side of buttery zucchini noodles or a light green salad without potassium-heavy ingredients like tomatoes or avocado.
