Smokin Okun's Stuffed Shells
Why I Love This Recipe
I have always enjoyed cooking and Italian has always been a staple in the rotation. Here is one that everyone fights over at the table when I make it. Enjoy!!

Ingredients You'll Need
1 cup fresh spinach (or canned if u want)
16oz cottage cheese
16oz ricotta cheese
3 Garlic pieces from clove
2 boxes of large shell noodles
1 bottle of your favorite sauce
OR a can of tomato paste and 1 can of tomato sauce
10 slices of mozzarella or provolone cheese
Preheat the oven to 350 degrees. Get out pot and water to boil noodles.
Boil the noodles til they are al dente. Only use shells that are whole after cooked for filling.
While noodles are boiling, make the stuffing. Rinse and chop up spinach. Chop up garlic. Mix together ricotta, cottage cheese, spinach add garlic and out in a pinch of salt and 4 regular pinches or good shakes from a shaker of pepper. Use a table spoon or serving spoon and take a good spoonful and fill the shells.
In a rectangular (glass preferred) casserole baking pan, put a little sauce to cover the bottom of the pan so the shells don't stick to the bottom while it bakes. Line up the filled shells in the casserole pan. Usually fills two rows and put some in to fill the remaining space on the side. Put some more tomato sauce or paste and sauce combo. Just enough to cover it and fill
In the gaps between open spots. Cover the entire thing with provolone or mozzarella slices. Cover with a layer of foil but make sure to leave room so cheese does not just stick to the foul. Make sure the sides and corners are securely covered.
Bake 30 minutes. Let sit 5 minutes. Uncover and serve.
