Why I Love This Recipe

Jalapeños are named after the Mexican town of Xalapa, where they were traditionally cultivated. They add a spicy kick and vibrant flavor to dishes.


Ingredients You'll Need

4 boneless, skinless chicken breasts
1 cup shredded cheddar cheese
4 jalapeños, sliced
8 slices bacon
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste


Directions

Preheat the oven to 375°F (190°C).


Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.


Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.


Lay a slice of bacon on each chicken breast, then sprinkle with shredded cheddar cheese and place a few slices of jalapeño on top.


Roll up the chicken breasts and secure with toothpicks.


Place the chicken rolls on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.


Remove the toothpicks before serving.

A crisp, cold beer or a refreshing margarita would complement the smoky, cheesy flavors of the chicken rolls.
