Smooth Tomato & Creamy Tofu Sauce

Why I Love This Recipe
While driving I came up with this recipe... I was craving a pasta dish with a creamy tomato sauce & did not feel like eating chicken... Being a "pollotarian" I rely on getting my protein intake from other sources as well, such as legumes, nuts, cheese, eggs & of course TOFU!!! SOoOoOo this recipe was born :-)
Ingredients You'll Need
-2 28oz of canned San Marzano Tomatoes
-1 package of soft tofu
-lots of garlic
-chopped onion
-lemon juice
-salt & pepper
-good amount of tomato paste
-2 bay leaves
-touch of red pepper flakes
-touch of dried basil
-good quality olive oil
-Michael Buble playing as background music :-)
Directions
I will not be able to give you exact measurements for this recipe since most of my cooking is done by the "eyeballing" technique & using all of my senses...
First saute the garlic & onion mixture with the olive oil... Meanwhile get the blender ready and mix in the tomato & tofu... when the garlic & onion mixture is ready, transfer to the blender and blend the ingredients altogether until a thick yet smooth consistency has been achieved... transfer the blended mixture into a saucepan and add the rest of the ingredients to your liking... Simmer the sauce mixture for about 45 minutes (don't forget to discard the bay leaves before serving). Use this sauce with angel hair pasta & ENJOY :-)
