Why I Love This Recipe

In large bowl cream butter and confectioner’s sugar until fluffy. Beat in vanilla. Combine Baking mix, zanthum gum, and salt. Gradually stir into butter mixture. Stir in pecans if desired. Refrigerate until chilled, an hour or so. Roll into 1” balls and place on ungreased baking sheet. Bake in an oven preheated to 350F for 10-12 Minutes. Roll warm cookies in confectioner’s sugar. Roll again in confectioner’s sugar when cool. Makes 4 Dozen.
