Why I Love This Recipe
My mom use to make this once in a while for my dad.
Ingredients You'll Need
1/2 pound ground beef
1/2 pound ground lean pork (oppitional can use all beef)
1 large onion diced
2 1/2 cups tomato juice
1 pkg frozen corn (1 3/4 cups) (can use mexican corn by green gaint)
2 tsp chili powder
1 tsp salt
1/4 tsp pepper
1 cup four
1/4 cup cornmeal
1/2 tsp salt
1/3 cup plus 1 tbsp shortening
3 tbsp cold water
Preheat oven to 400 degrees
In large skillet , cook and stir meat and onions until meat is brown and onion is tender, drain off fat.
Stir in remaining ingredients except pastry.
Heat to boiling; reduce heat and simmer 10 minutes.
Pour meat mixture into ungreased baking dish, 11 1/2x7 1/2x 1 1/2 inches.
Cover with pastry; seal edges if baking dish.
Measure flour, corneal, and salt into bowl.
Cut in shortening throughly.
Sprinkle with water, 1 tbsp at a time, mixing until all flour is moistened.
Gather into a ball; roll into retangle, 12x8 inches, on lightly floured cloth-covered bard.
Fold lengthwise in half; cut slits on folded edge.
(if using slef-rising flour omit salt)
