If marinated and partly dried - mushrooms, onions, red pepper, zucchini do very well in this soup.
Soak a few cashews and blend the liquid ingredients if you don't want to use coconut meat.

Ingredients You'll Need
Soup Liquid
3 Tbsp coconut meat (optional)
2 Tbsp tamari or 1 Tbsp miso
1 Tsp lemon juice
1 Tsp cumin
1 Tsp tumeric
1/4 inch ginger - pressed
3-4 shakes of cayenne pepper
2 cups warm water
Soup Veggies
2 green onions sliced diagonal - or chives - even leeks work
2 Tbsp cilantro chopped fine
Shredded in small amounts - any veggie you like
Carrot
Zucchini
Spinach
Arugula
Pepper - red or yellow
Yam
Cabbage
Mushrooms
Peas - of course you would not shred these.
Directions
Mix the soup liquid ingredients (blend if needed) stir in the veggies - serve immediately.
Pairs Well With
a salad of your choice.
