Why I Love This Recipe

you can truly make this your own by adding what you like to the filling - have black beans...add'em; like it spicy? add in jalapeños; prefer pork...change it up.


Ingredients You'll Need

6 chicken breasts
Cumin
Salsa
Mexican cheese
Onions
Green chilies
Corn tortillas

Sauce:
¼ cup butter
¼ cup flour
2 cups chicken broth
Salt & pepper to taste
2 cups sour cream
Green Chilies


Directions

Boil chicken breast. Cool and shred. Roast green chilies. In a skillet, sauté onions and green chilies, season with cumin, salt & pepper. Add chicken and salsa to taste.

Remove from heat and cool.
prepare the sauce: Sauté any left over onions. Melt butter, add flour, make roux. Add chicken broth, salt & pepper to taste. Remove from heat and add sour cream.
Assemble: Soften corn tortillas, add chicken and cheese and roll. Place seam side down in casserole dish. Top with sauce and cheese.

Bake at 350 until bubbly – 30 minutes.
