Ingredients You'll Need

1 Pound of Ground turkey or Ground beef
2 Cups canned crushed Tomatoes (I like to use Rotel for the spice)
1 Small can Tomato Sauce
1 Cup Picante Sauce (I use medium your choice for heat)
1 Package Taco Seasoning Mix
½ Cup canned diced chilies
1 Cup part skim Ricotta Cheese
8 oz UNCOOKED Lasagna noodles
4 Ounces Cheddar Cheese – grated
4 Ounces Pepper Jack Cheese – grated
Jalapeno slices (optional)


Brown the meat in skillet: add taco seasoning (dry), tomatoes, tomato sauce, picante sauce and chilies. Bring to boil then reduce heat, simmering for 10 minutes uncovered. In 9x13 inch pan, spread 1/4 cup of sauce. Layer uncooked lasagna noodles, 1/3 of sauce mixture, 1/3 of ricotta cheese, 1/3 of grated cheeses. Repeat layers 3 times, ending with grated cheeses.

Cover with aluminum foil. Bake at 350 degrees for 30 minutes. Remove foil and bake an additional 10-15 minutes uncovered until noodles are tender.

This can be made a head of time and refrigerated until time to bake. Feel free to make as cheesy or meaty as you want for your family/friends. Enjoy!
