"Southern Style 4-cheese Mac n Cheese"

Serves 4 servings | Prep Time 20 minutes | Cook Time 30 minutes

Why I Love This Recipe

Creamy, cheesy, delicious Mac n Cheese just the way it's made in the South. You may also add cream cheese. Patti LaBelle includes sautéed shrimp and steamed lobster to hers.

Ingredients You'll Need

1 lb. Elbow Macaroni
2 cups water
1 1/2 stick of butter
1/2 cup flour
2 eggs
1 can evaporated milk
1/2 cup whole milk
1/2 cup sharp cheddar cheese
1/2 cup mild cheddar cheese
1/2 cup Monterey Jack cheese
1 cup Velveeta squares
1 tsp salt
1 tsp black pepper
1 tsp Paprika


Directions

Preheat over to 350◦F
Bring 2 cups of water and salt to a boil
Add elbow macaroni, stir
Drain macaroni (do not rinse)


For Rue, melt 1 stick of butter in saucepan on low
Add flour and whisk
Add evaporated milk
Add whole milk
Add cheeses gradually (save some for topping)
Continue to stir
Add Pepper and Paprika


For baking, grease bottom of pan with butter or spray
Add macaroni to pan
Add 2 eggs to macaroni to coat
Add cheese sauce and stir
Add cheese on top
Add cubes of butter on top of cheese


Cover with foil and bake for 30 minutes
Uncover and back for an additional 20 minutes
