Why I Love This Recipe

I've had this recipe at just about every Baptist church "fellowship supper" I've ever been to. I've also received this dish after every baby I've had. At least twice. It's a Southern classic.


Ingredients You'll Need

3 cups cooked chicken (pull apart for more flavor before adding to casserole)
3 cups of cooked rice
2 cans cream of chicken soup
1/2 cup sour cream
1/2 mayonnaise or "miracle whip"
1 cup milk
1 cup white cheddar cheese, shredded
1 sleeve "ritz" type crackers, crumbled
1 stick butter, melted


Directions

In a sauce pan over medium-low heat, add milk, sour cream/mayo and soup.


Grease a 9x13 pan. Place the cooked rice in the bottom of the pan. Pull the cooked chicken apart and place on top of the rice. Sprinkle with cheddar cheese, salt and pepper. Pour the heated soup mixture over the everything. Pour the crumbled crackers over the top of mixture and drizzle the melted butter all over the top.


Bake for 25-30 minutes in a 350 degree oven.


Pairs Well With

It's a potluck! So this is good with green beans, or broccoli, or sweet potatoes...
