Southern Italian Egg Cookies

Ingredients You'll Need
3 Eggs
½ Cup milk
2 Teaspoons lemon extract
½ Cup sugar
½ Cup vegetable oil
3 Cups flour
8 Teaspoons baking powder
Icing:
2 ½ cups powdered sugar
⅓ cup water
2 Teaspoons lemon extract
Candy sprinkles
Directions
Bake biscuits according to package. Remove from oven and allow to cool before slicing each in half. Fill a large skillet 3/4 full of water. Bring to just under a boil and add vinegar. This helps the eggs stay together. Break each egg individually into a small bowl and slide into the hot water. Cook no more than 4 eggs at a time. After 4 minutes, gently remove with a slotted spoon and place on a biscuit bottom that has a slice of Canadian bacon and mayonnaise on it. Top with biscuit top and repeat until all biscuits are assembled.
