500g small sea fish (such as mackerel or sardines)
1 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon garlic powder
Cooking oil for frying
For the Fish Sauce:

4 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon sugar
1-2 red chili peppers, finely chopped
2 cloves garlic, minced
2 tablespoons water


Prepare the Fish:

Clean the fish thoroughly and pat dry with paper towels.
In a bowl, mix salt, turmeric powder, and garlic powder.
Rub the spice mixture onto the fish, ensuring they are evenly coated.
Let the fish marinate for at least 15 minutes.
Fry the Fish:

Heat enough oil in a frying pan over medium heat.
Once the oil is hot, carefully add the fish in batches.
Fry until golden brown and crispy, about 4-5 minutes on each side.
Remove the fish and drain on paper towels to remove excess oil.
Prepare the Fish Sauce:

In a small bowl, mix fish sauce, lime juice, sugar, chopped chili peppers, minced garlic, and water until the sugar is dissolved.
Adjust the taste as needed, adding more lime juice or sugar to balance the flavors.

Arrange the fried fish on a plate lined with parchment paper.
Serve with the fish sauce on the side for dipping.
