Why I Love This Recipe

Our family lived in Oklahoma for many years and developed an enjoyment of Southwest crusine. This easy Chicken meal is a summertime favorite.


Ingredients You'll Need

2 T. Southwest Seasoning (recipe included in this cookbook)
1 lime
2 T. oil
4 chicken breasts, cut into strips
2 sweet peppers
2 onions


Directions

Place seasoning mix, juice from the lime, and oil in a plastic bag. Add chicken. Marinate a couple of hours or overnight. (I like to buy a large package of chicken breasts, cut them up them put them in freezer storage bags with the marinade for a family meal and freeze them.) Remove chicken from marinade when ready to grill. Toss peppers and onions of your choice into marinade. Grill chicken on one side of your grill and grill peppers and onions on the other side on a sheet of foil sprayed with cooking spray. Discard marinade. Cook until chicken is done and lighjtly charred and veggies are tender. Serve immediately.


Pairs Well With

Great wrapped in a corn tortilla and topped as you like or served over rice and topped as you please.
