Southwest Chopped Salad

"A salad of romaine, sweet pepper, and red onion dressed with a vinegrette of olive oil, lime juice, and cilantro."

Tex Mex food is usually served with greens. This salad is very good with Tex Mex dishes.
Ingredients You'll Need
2 thinly sliced sweet peppers
1/2 of a red onion, thinly sliced
5 c. romaine, torn
3 T. olive oil
1 1/2 T. lime juice
1/2 c. cilantro
salt and pepper to taste
sliced black olives
Directions
Make salad dressing by putting olive oil, lime juice, cilantro, and salt and pepper to taste in a blender. Pulse a few times to chop cilantro and then turn blender on to blend dressing. Taste to adjust seasoning. Chop peppers and onions together and add to dressing. Let sit for 10-15 minutes, stirring now and then. When ready to serve, chop romaine if desired, and add dressing with chopped peppers and onions. Top with sliced black olives to serve. Depending on what else you are serving, you may want to add other ingredients such as shredded Monterey Jack cheese, drained whole corn, and rinsed and drained black beans.
