Serves 4 | Prep Time 10-15 minutes | Cook Time

Why I Love This Recipe

Our family enjoys this salad with a variety of Tex Mex and Southwest dishes such as Enchiladas, Tamale Pie, Cilantro Lime Chicken, etc.


Ingredients You'll Need

Salad:
1 c. chopped green cabbage
1 c. chopped green leaf lettuce
1 c. chopped kale
1 c. chopped red cabbage
1/2 c. chopped carrots
1/2 c. green onion, very thinly sliced
1/2 c. sliced ripe olives
1 c. Mexican shredded cheese
Fritos, whole or lightly crushed to taste
Dressing:
1/2 c. of your favorite Ranch dressing
1/4 c. of your favorite roasted salsa (or more to taste)
1/2 t. chili powder
1/2 t. smoked paprika
1/2 t. cumin


Directions

Put all the chopped veggies in a large bowl and chill until serving. In a small bowl mix together dressing ingredients and stir well. Chill until serving. When ready to serve, top salad with olives, cheese, and Fritos. Serve dressing on the side.


Pairs Well With

Great with Mexican and Southwest meals.
