"Fresh tasting SouthWest coleslaw."

Why I Love This Recipe

This recipe is great to serve with Mexican and SouthWest dishes. It adds that fresh, delightful crunch.


Ingredients You'll Need

14 oz. package prepared coleslaw mix (or 6 c. shredded cabbage and carrots)
1/4 small red onion, thinly sliced
1 T. cilantro (chopped)
For dressing:
1/3 c. olive oil
2 limes, juiced (about 1/4 c.)
3 garlic cloves, minced
2 T. honey
1 1/2 t. cumin
1 t. oregano
siracha to taste
freshly ground sea salt and freshly ground pepper to taste


Directions

In a large bowl, mix together coleslaw mix, onion, and cilantro. In a blender, put oil, lime juice, garlic, and spices. Blend briefly. Chill coleslaw and dressing until a few minutes before serving. Add dressing to coleslaw, mix well, rest for 15 minutes, mix and serve. Leftovers can be refrigerated overnight to eat the next day.
