Southwest Shrimp, Bacon and Pineapple

Who says pizza has to be boring? This recipe takes ordinary pizza and kicks it up a notch. Are you looking for a new after school snack for kids? Pizza! Need a new lunch recipe? Pizza! On the run and no time to make dinner? Pizza! All you need is some fluffy English Muffins, Bacon, Shrimp, Pineapple, Cheese and a few seasonings. Now you have a protein packed, nutritious meal that will make tweens, teens, husbands, foodies and seafood lovers happy any time of the day and won't break your brackets.
Ingredients You'll Need
4 Slices of Bacon, Chopped ( DO NOT Over-Crisp)
1-2 Tsp. Chili Powder
1/2 Lb. Medium Raw Shrimp (peeled and deveined)
1 Cup Fresh Pineapple (chopped)
4 BAYS English Muffins, any variety (split)
8 Slices of Pepper-Jack Cheese
2 Tbsp. Fresh Cilantro/Parsley (optional)
Directions
Cook bacon in a large skillet over medium-high heat (4-5 mins.) or until partially cooked, stirring occasionally.
Drain grease and return bacon to the skillet. Sprinkle chili powder over shrimp and add shrimp and pineapple to the skillet.
Cook 3-5 mins. or until shrimp and bacon have fully cooked.
Meanwhile, toast english muffins on a baking sheet ( not TOO crispy) and cover each muffin half with cheese.
Broil 2 min. or until cheese is melted.
Top with bacon/shrimp mixture and sprinkle on cilantro/parsley.
