Why I Love This Recipe

This is a recipe of my favorite restaurant, Native Foods. Vegan and delicious/nutritious. This is my favorite salad of all time. (:

Ingredients You'll Need

2 cups finely shredded romaine lettuce
2 cups finely shredded green cabbage
¼ cup basic balsamic vinaigrette (optional)
2 cups veggie taco meat
2 ½ cups salsa fresco
½ cup chipotle ranch dressing
1 ½ cup corn tortilla chips, can crush if large
½ cup loosely packed fresh cilantro leaves
½ cup chopped green onions
½ cup sliced black olives
½ cup fresh /frozen corn
1 avocado, sliced

Taco Meat: (can buy in store premade with veggie meats) OR
1 cup textured soy protein granules
1 cup water
¼ cup soy sauce
2 tbsp.olive oil
1 tsp. cumin powder
1 tsp.ground coriander
¼ tsp garlic powder
¼ tsp. onion powder
Note: Can use a Mexican seasoning spice instead of individual spices.
Place ingredients in saucepan and bring to a boil. Remove from flame, cover, let sit 10 minutes.

Salsa Fresca
2 cups chopped fresh tomatoes
½ cup chopped red onion
1 cup lightly chopped fresh cilantro
¼ cup lime juice
1 ½ tsp sea salt
Mix all ingredients in a bowl.

Chipotle Ranch Dressing
1 ¼ cup vegan mayonnaise
¼ tsp garlic powder
¼ tsp.onion powder
¼ tsp. sea salt
½ tsp. black pepper
2 tsp. finely chopped parsley
¾ cup soy milk
4 tsp. chipotle sauce (can use your favorite hot sauce if can’t find chipotle in store)
Wisk all ingredients in a bowl. Refrigerate and serve over salad.
